Double Peanut Pie

This pie is a riff on Pecan Pie. It is very similar in looks, but the taste is all peanuts. 

Simple to make - but very tasty!

1 9-inch unbaked pie crust
3 eggs
1 cup dark corn syrup
1/2 cup sugar
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
1 cup salted peanuts
whipped cream for garnish

1. Prepare pie crust. Preheat oven to 350 degrees F.
2. In large bowl with mixer at medium speed, beat eggs with corn syrup, sugar, peanut butter and vanilla until smooth. Stir in peanuts.
3. Place pie plate on oven rack; pour mixture into crust. Bake 55 to 60 minutes or until knife inserted about 1 inch from edge comes out clean. Cool. Garnish servings with whipped cream.
